Directions
Prepare the Pork:
Preheat your oven to 180°C (350°F).
Season the pork fillet generously with salt and pepper.
Heat Extra Virgin Olive Oil in a large skillet over medium-high heat. Sear the fillet on all sides until golden brown (about 2–3 minutes per side).
Prepare the Saffron-Orange Sauce:
In a small bowl, whisk together Midas Gardens Saffron Dressing, orange juice, orange zest, honey, Dijon mustard, and minced garlic.
Roast the Pork:
Place the seared pork fillet in a baking dish. Pour the saffron-orange sauce over the fillet.
Roast in the preheated oven for 20–25 minutes, or until the internal temperature reaches 65°C (150°F) for medium. Baste the pork with the sauce halfway through cooking.
Rest and Serve:
Remove the pork from the oven and let it rest for 5–10 minutes before slicing.
Garnish with fresh parsley and serve with the remaining sauce drizzled on top.
