FOR THE KIMCHI MAYONNAISE:
- 500 g meagre cut into small squares (2-3 cm)
- 2 small onions, finely chopped (we will have removed the sprout)
- 4 pcs lime juice
- 1 chili pepper (cleaned from its seeds)
- 3 tbsp chopped coriander
- 250 g of mango cut into small fine squares
- Fleur de sel and freshly ground pepper
- 20 g Midas' Gardens Extra Virgin Olive Oil Ginger Dressing
Meagre Ceviche flavored with Ginger and Mango
In a bowl, homogenize the vinaigrette with the lime juice, then add the onion, chopped pepper, coriander, and mango.
Season with the fleur de sel and freshly ground pepper.
Leave for 45 minutes and serve.
Garnished with coriander leaves and watercress.
