FOR THE KIMCHI MAYONNAISE:
- 8 lamb chops (French cut)
- 10 g of finely chopped rosemary
- 5 g of chopped garlic
- 5 g of chopped parsley
- 30 g galette (from white bread)
- 100 g of lettuce
- 20 g of olive oil
- 50 g Midas' Gardens Extra Virgin Olive Oil Masticha Chios PDO Dressing
- Salt and freshly ground pepper
For the sauce
- 100 g Midas' Gardens Extra Virgin Olive Oil Masticha Chios PDO Dressing
- 50 g of orange juice
- Zest from ½ orange
- 20 g frozen butter
- 50 g Midas' Gardens Extra Virgin Olive Oil Oregano Dressing
- Salt
- Baby beetroot leaves for finishing the dish
Herb-crusted Lamb chops in Mastic sauce with Orange
Season the lamb chops with salt, pepper, and Midas’ Gardens Extra Virgin Olive Oil Mastiha Chios Dressing.
In a bowl mix the chopped rosemary, garlic, parsley, and the galette.
Thoroughly bread the lamb chops on both sides and saute in a hot pan with olive oil for 4-5 minutes on each side.
Remove and place on paper to rest the meat.
In the same pan, extinguish with the vinaigrette and add the orange juice.
Bring to a boil and combine with the frozen butter.
Finish with the zest.

We can accompany it with mashed sweet potatoes, celeriac, roasted carrots, and beets, or classically, with fragrant crispy fries.
